Jalapeño Popper Crusted Chicken
1 cup Doritos brand jalapeño popper corn chips crushed
4 Boneless chicken breast (pounded thin)
½ teaspoon chili powder
½ teaspoon garlic salt
½ teaspoon kosher salt
½ teaspoon black pepper
1 cup of flour
1 Yellow onion
1 Red Pepper
1 Yellow pepper
1 can black beans
1 ear sweet corn or ½ can
¼ cup olive oil
2 table spoons sour cream
Crush Doritos in food processor to crumb.
Wash chicken and pat dry. Salt and pepper chicken.
Season flour with chili powder, garlic salt, salt, pepper.
Dip chicken in flour then egg wash and coat in Doritos crumbs
Heat pan and coat with ¼ cup of olive oil. Sautee chicken until golden brown.
Place on aluminum pan and bake for 20 minutes at 375 degrees.
While chicken is cooking sauté sliced onion, peppers in 2 table spoons of olive oil until onions are translucent. Add black beans with corn, 1 tsp salt, 1tsp black pepper and chili powder.
Remove chicken from oven. Rest for 1 minute then slice chicken diagonally into two pieces then plate.
Top chicken with beans, corn and peppers.
Garnish with sour cream, avocado and lime slices.

2 sliced bananas
¼ Brown Sugar
1 table spoon butter
¼ cup rum
1 cup vanilla ice cream
Heat medium sauce pan at medium heat and brown sugar start to caramelize add butter melt. Add dark rum slowly and flame until all alcohol is burnt off then toss and warm bananas
Top banana bread with ice cream and hot banana rum sauce
